Grilled radicchio, Caesar salad style
I had a massive raddichio in my garden, but this recipe works with the smaller store-bought ones.

Grilled radicchio, Caesar salad style

Ingredients
4 radicchio
1/4 cup olive oil
1/2 cup grated Parmesan
1 cup fresh ground bread crumbs
1/2 teaspoon Dijon mustard
1 anchovy filet
2 cloves garlic, minced
salt and pepper
1/2 cup white wine or water
Instructions
Wash the radicchio well. Pat dry. Season with salt and pepper, making sure to get some between the leaves.
Make the breadcrumb topping: In a bowl mix together remaining olive oil, mustard, breadcrumbs, and the other clove of chopped garlic. Stir well and set aside.
Using kitchen twine, tie the radicchio into an even and compact shape. The easiest way is to precut several lengths of string and lay them parallel on your cutting board, place the radicchio across the strings, then loop and tie each one.
Heat 3 tablespoons of olive oil in a skillet over high heat. Add the one chopped garlic clove and anchovy, stir, and add the radicchio. Sear on all sides.
Add water or wine, reduce heat, cover and cook about 7 minutes. The radicchio should be soft but not mushy.
Preheat broiler. Remove radicchio. Cover liberally with the breadcrumb mixture. Place under broiler for a minute or two. Check often to make sure it doesn't burn.
Remove from oven, cut strings, and enjoy.
